The following is an approximate breakdown of cutting options for a WHOLE HOG. When ordering a half hog just assume approximately half as much meat. The exact number of chops and steaks will depend on the thickness that you have them cut. The bacon and sausage can be packaged in any quantity you desire (ex. 1 lb. per package). Please note that any and all cuts may be smoked.
2 Hams approximately 8.5 pounds each (can be whole or sliced)
12 pounds Bacon (you choose slicing thickness and amount per package)
2 Tenderloins (whole or sliced)
5 pounds Ribs
18 pounds for sausage or ground pork (can choose some of each breakfast sausage, sweet, hot, or plain)
40 Pork Chops (when cut 1-inch thick) (you choose thickness and how many per package)
24 Pork Steaks (when cut 1-inch thick) (you choose thickness and how many per package)
A whole hog is approximately 85 pounds of meat.
